Handling my hamster?

OK, I have 2 male hamsters my first one is a dawf called Sammy Davis Jr, he's sooo cute & very friendly from the minute I got him. And then theres my new Syrian Luciano he's very cute and seems very friendly but I just can't pick him up! When I do he is so fast and just shoots off my hand and falls onto the ground (when my kitten is happily waiting) and its a mad dash to get him back... I think Im scared of him (my old female used draw blood all the time) What can I do to calm him down? He takes food from me and seems friendly, I just want to start playing with him like I do with sammy...
